Maple Banana Granola
Hearty, golden oats and buttery toasted pecans are studded with irresistibly crisp, Sun Tropics® Maple Pancake Saba Banana Chips that fills your home with the scent of freshly-baked banana bread. For a warm taste of mornings in Manila at any hour, keep an air-tight mason jar of granola at work to jazz up your midday yogurt, fruit salad or Sun Tropics® Original Coconut Milk Rice Pudding cup. We love it drizzled with vanilla oat milk, sprinkled onto ice cream, and swirled by the spoonful in a jar of peanut butter. And while you’re deciding which one of those options to try first, snacking on a handful straight from the pan definitely makes our list of favorite things.
Makes about 10, ½ cup servings
Ingredients:
2 ¼ cups gluten-free rolled oats
1 cup whole raw pecans
2 Tbsp coconut sugar
¼ tsp sea salt
1½ tsp cinnamon
Pinch of cardamom
Pinch of nutmeg
3 Tbsp ground golden flaxseed or 2 tbsp whole white chia
¼ cup unsweetened shaved coconut chips
1 cup Sun Tropics® Maple Pancake Saba Banana Chips
5 Tbsp pure maple syrup
¼ cup natural raw almond butter, unsweetened
¼ cup unrefined coconut oil
2 tsp pure vanilla extract
Directions:
- Preheat oven to 350˚ F. Mix oats, pecans, coconut sugar, flaxseed, salt, cinnamon, and cardamon together in a large bowl. Chop Maple Pancake Saba Banana Chips roughly into bite-size pieces and set aside. In a small saucepan over low heat warm the coconut oil, maple syrup, almond butter and vanilla extract just until all ingredients are liquefied; whisk well to blend. Pour almond butter mixture over dry ingredients and mix well until all dry ingredients are well coated.
- Spread the mixture evenly onto one or parchment-lined baking sheets, making sure no parts of the pan are overcrowded. Thickness of unbaked granola should be no more than ½ inch tall for crisp and crunchy granola. Use additional baking sheets, if needed. Place sheets on middle rack of oven and bake for 23-28 minutes, or until golden brown and fragrant. For granola cluster-lovers, toss granola gently midway through baking to ensure that granola on the edges of the pan and the center bake evenly—granola will begin to brown quickly near the end of baking time. For a looser, crisp granola, stir well twice during baking to break up large clumps.
- Remove baked granola from the oven and toss briefly to release any clumps from parchment. Allow granola to cool completely on the baking sheet. Once cool, sprinkle chopped Maple Pancake Saba Banana Chips over granola and toss well to combine. Store in a container or jar with an air-tight seal for up to 2 weeks.
