Salmon Burgers with Spicy Mango Sauce

Makes 6 Servings

Ingredients:

Burger:

2 1/2 lb fresh salmon, skin off and minced Sun Tropics® Pure Calamansi
3/4 cup breadcrumbs
1 Tbsp onion powder
1 Tbsp garlic powder
3 Tbsp Sun Tropics® Mango Nectar
3 Tbsp chives, chopped
1/4 cup mayonnaise
1/4 vegetable oil
Favorite burger garnish

Spicy Mango Sauce:

1 cup mayonnaise
1 medium jalapeño, minced
1/4 cup Sun Tropics® Mango Nectar
1 tsp salt

Directions:

  1.  To prepare the burger:  In a bowl, mix together the salmon, breadcrumbs, onion powder, garlic powder, Mango Nectar, chives, and mayonnaise.  Mix until combined.  Form 6  burgers.
  2.  To prepare the sauce:  In a separate bowl, combine the mayonnaise, jalapeño, Mango Nectar, Pure Calamansi, and salt.  Stir to combine.
  3.  Preheat grill to medium heat.  Brush each patty with oil and cook for 2 mins on each side.  Remove from grill, serve on buns or bed f greens and top with the Spicy Mango Sauce.
