Salted Caramel Apple Crumble

Rich, creamy rice pudding swirled with aromatic cinnamon is the perfect match for tangy-sweet apples in this warm, breakfast-y twist on apple pie. A buttery crumble topping made with our gluten-free Salted Caramel CocoRolls™ adds an irresistible crunch and just enough indulgent to make it good enough for dessert. We recommend keeping a jar of prepared crumble topping in your fridge for unexpected cravings or to use on any of your favorite pie recipes that call for a traditional flour streusel.

Makes 2 servings

2 individual snack cups (1 package) Sun Tropics® Cinnamon Coconut Rice Pudding
½ c almond or oat milk (or favorite dairy-free beverage), unsweetened
1 medium apple, finely diced, about 1/3 cup
¼ c apple butter or unsweetened applesauce
½ tsp pure vanilla extract

For crumble topping:
1 full 4oz bag Sun Tropics® Salted Caramel CocoRolls™, finely crushed or blended into crumbs (roughly 1 cup)
3 Tblsp slivered almonds OR chopped walnuts
2 Tblsp oat flour OR almond flour
4 Tblsp coconut sugar
5 Tblsp unrefined coconut oil or vegan butter, melted
Pinch sea salt (optional)
Pinch cinnamon (optional)

You will have some leftover crumble topping. Store in an airtight container in the fridge for up to 2 weeks, or triple the ingredients of the apple pudding mixture to use all the topping and create 6 delicious crumbles.

Preheat oven to 350F. In a small bowl, mix both cups of Sun Tropics® Cinnamon Coconut Rice Pudding, almond milk, apple butter an vanilla extract until thoroughly combined. Divide mixture evenly into two 10oz ramekins. Divide diced apple between ramekins, sprinkling on top of pudding mixture and prepare crumble topping.

For crumble topping, combine Sun Tropics® Salted Caramel CocoRoll crumbs, oat flour, almonds, coconut sugar, salt (if using) and cinnamon (if using) and mix well. Drizzle in melted coconut oil and mix gently until all ingredients are thoroughly combined. The crumbs should begin to form occasional clumps when pressed together. Sprinkle 3-4 Tablespoons of crumble topping on top of each ramekin and press lightly with spoon to form an even crust—this helps to prevent the crumble from burning or spilling over as it bakes.

Place ramekins on a baking sheet and set in preheated oven for 20-25 minutes, or until crumble topping is golden brown and apples are softened. Serve warm (with ice cream!) or chilled.
