Sole with Calamansi Butter & Capers
Makes 2 servings
Ingredients:
4 medium filets of sole
Salt and pepper
Flour
4 Tbsp butter
¼ cup of water or white wine
2 Tbsp capers
4 Tbsp Sun Tropics® Pure Calamansi
Directions:
- Use paper towel and pat sole filets to dry. Season fish well with salt and pepper.
- In a shallow bowl, add flour. Coat both sides of fish with flour. Press down firmly and shake to remove excess flour.
- In a large frying pan over medium high heat, melt butter until butter bubbles and browns slightly. Do not burn.
- Fry fish until golden brown, about 3 mins. Turn and repeat on the other side.
- Bring down heat to medium. Add water (or wine), capers and calamansi. Scrape frying pan for bits and pieces and until sauce has reduced slightly.
- When filets are golden brown, remove from heat and set aside.
- Reduce heat to medium. Add water (or wine), capers and Pure Calamansi. Scrape bits and pieces from pan and reduce sauce slightly.
- Pour sauce over sole filets. Serve with sauteed vegetables or salad.
