Sole with Calamansi Butter & Capers

Makes 2 servings


4 medium filets of sole
Salt and pepper
4 Tablespoons butter
¼ cup of water or white wine
2 Tablespoons capers
4 Tablespoons Sun Tropics® Pure Calamansi


  1. Use paper towel and pat sole filets to dry. Season fish well with salt and pepper.
  2. In a shallow bowl, add flour. Coat both sides of fish with flour. Press down firmly and shake to remove excess flour.
  3. In a large frying pan over medium high heat, melt butter until butter bubbles and browns slightly. Do not burn.
  4. Fry fish until golden brown, about 3 minutes. Turn and repeat on the other side.
  5. Bring down heat to medium.  Add water (or wine), capers and calamansi.  Scrape frying pan for bits and pieces and until sauce has reduced slightly.
  6. When filets are golden brown, remove from heat and set aside.
  7. Reduce heat to medium. Add water (or wine), capers and Pure Calamansi. Scrape bits and pieces from pan and reduce sauce slightly.
  8. Pour sauce over sole filets. Serve with sauteed vegetables or salad.
