Butternut Squash and Winter Green Salad

Ingredients:

5 collard leaves, trimmed and finely chopped
⅓ bunch kale, trimmed and chopped
1 cup radicchio, finely chopped
2 cups butternut squash, diced and roasted
½ cup Sun Tropics Passion Orange Guava juice
⅛ cup olive oil
⅛ cup apple cider vinegar
½ tsp salt
½ tsp black pepper
¼ cup goat cheese, crumbled
¼ cup pomegranate seeds
4 Tbsp. roasted pumpkin seeds

Directions:

  1. In a large salad bowl, add winter greens and radicchio. Arrange squash over greens.
  2. In a small bowl, add Passion Orange Guava juice, olive oil, vinegar, salt and pepper. Whisk until dressing is combined. Set aside.
  3. Sprinkle goat cheese on top of salad. Follow with pomegranate seeds and pumpkin seeds.
  4. Pour dressing over salad and toss to mix. Serve immediately.
