Calamansi Sorbet

Ingredients:

3 cups water
2 cups granulated sugar
1 cup Sun Tropics Pure Calamansi
pinch of salt

Special equipment:  Ice Cream Maker

Directions:

  1. Prepare syrup by dissolving sugar in hot water in a sauce pan over medium-low heat.  Chill in a container.
  2. Turn on ice cream maker (please refer to manufacturer’s manual); pour all ingredients into the frozen freezer bowl and let mix until thickened, about 15 to 20 minutes. If a firmer consistency is desired, transfer the sorbet to an airtight container and place in freezer for about 2 hours.  Remove from freezer about 15 minutes before serving.
  3. (Optional) Garnish with chocolate sauce and fresh apricot halves.
