Fast & Easy Mango-Banana Ice cream (Dairy-Free!)
Craving ice cream, but trying to be good or can’t do dairy? This guilt-free treat is about as quick and easy as they come, and the taste and texture is so bursting with yum, you’ll be shocked at its only two ingredients: Frozen Bananas and Sun Tropics Organic Mango Nectar! That’s right, just fruit. No cups full of sugar. Just juice. And it. is. awesome.

For 2 servings
2 organic bananas, peeled and frozen
*Peel the bananas before you freeze them, and store in an airtight bag or container
1/2 cup Sun Tropics Organic Mango Nectar
*You may add a little more or less. Due to varying sizes of bananas, the exact amount varies.
1. Combine in a blender the frozen bananas with about three quarters of the Sun Tropics Organic Mango Nectar.
2. Blend until smooth.
*We find that blending works best if you begin on the lowest setting and increase speed until smooth. The mixture will be very thick, so when the blades no longer pick up the mixture (this may be a matter of moments at first), stop the blender, wait for blades to completely stop moving, stir, add additional Mango Nectar by the tablespoon, and blend until you reach a thick, creamy, soft-serve ice cream texture.
3. If you’re a fan of soft-serve, spoon into bowls and enjoy immediately! For a thicker ice cream texture, spoon into an airtight container and place in the freezer for one to two hours (no longer than that, though, or it will begin to turn too solid!). To reach the consistency shown in the photo above, we froze ours for a little over one hour.
