CRISPY TOFU SISIG

Prep Time:            10 mins (plus optional marinating)
Total Time:            45 mins

Makes 4 Servings

Ingredients:

1 lb firm tofu, cut into small cubes
½ tsp salt
¼ tsp ground black pepper, divided
1 Tbsp cooking oil, plus more as needed
1 large red onion, finely chopped
1 – 2 red chili peppers, minced (or ¼ Tbsp chili flakes)
3 – 4 tsp Sun Tropics Pure Calamansi 100% Juice
1 ½ tsp soy sauce
1 Tbsp mayonnaise
4 large eggs
Sliced red chilis and chopped scallions (optional, for garnish)
Lime wedges and steamed or garlic fried rice, for serving

 

Directions:

  1. Season tofu cubes with salt and ¼ tsp black pepper. Optional: let sit for 10-15 mins.
  2. Heat cooking oil in a skillet over medium heat. Add tofu cubes and pan fry for 12-15 mins. turning occasionally, until the edges are golden and crispy. Transfer to a mixing bowl.
  3. Add red onion, chili peppers, Pure Calamansi 100% Juice, soy sauce, remaining ¼ tsp ground black pepper, and mayonnaise to the bowl. Toss until evenly combined.
  4. Using a paper towel, wipe out the skillet and return it to medium heat. Add a bit more oil if needed. Add the tofu sisig mixture and press it down lightly with a spatula. Create 4 shallow wells in the mixture and crack an egg into each well. Let cook for 5-7 minutes, until the eggs are just set and the edges of the sisig are crispy.
  5. Garnish with sliced red chilis and chopped scallions, if using. Serve immediately with lime wedges and steamed rice.
