CRISPY TOFU SISIG
Prep Time: 10 mins (plus optional marinating)
Total Time: 45 mins
Makes 4 Servings
Ingredients:
1 lb firm tofu, cut into small cubes
½ tsp salt
¼ tsp ground black pepper, divided
1 Tbsp cooking oil, plus more as needed
1 large red onion, finely chopped
1 – 2 red chili peppers, minced (or ¼ Tbsp chili flakes)
3 – 4 tsp Sun Tropics Pure Calamansi 100% Juice
1 ½ tsp soy sauce
1 Tbsp mayonnaise
4 large eggs
Sliced red chilis and chopped scallions (optional, for garnish)
Lime wedges and steamed or garlic fried rice, for serving
Directions:
- Season tofu cubes with salt and ¼ tsp black pepper. Optional: let sit for 10-15 mins.
- Heat cooking oil in a skillet over medium heat. Add tofu cubes and pan fry for 12-15 mins. turning occasionally, until the edges are golden and crispy. Transfer to a mixing bowl.
- Add red onion, chili peppers, Pure Calamansi 100% Juice, soy sauce, remaining ¼ tsp ground black pepper, and mayonnaise to the bowl. Toss until evenly combined.
- Using a paper towel, wipe out the skillet and return it to medium heat. Add a bit more oil if needed. Add the tofu sisig mixture and press it down lightly with a spatula. Create 4 shallow wells in the mixture and crack an egg into each well. Let cook for 5-7 minutes, until the eggs are just set and the edges of the sisig are crispy.
- Garnish with sliced red chilis and chopped scallions, if using. Serve immediately with lime wedges and steamed rice.
