Pumpkin Banana Chip Bread

Makes 10-12 Servings

Ingredients:

1 cup pumpkin purée
2 ripe bananas, mashed
¼ cup coconut sugar
½ cup neutral oil
2 large eggs
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
1 cup Sun Tropics Original Saba Banana Chips, broken into pieces

Glaze:

2 Tbsp cream cheese, softened
1 cup powdered sugar
2 Tbsp milk
½ tsp vanilla extract
Pinch of cinnamon

Directions:

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk pumpkin, mashed bananas, sugar, oil, eggs, and vanilla until smooth.
  3. In another bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt. Fold dry ingredients into the wet mixture until just combined. Stir in chopped Saba Banana Chips for a crunchy bite. Pour batter into prepared pan.
  4. Bake for 55-65 mins., until a toothpick inserted in the center comes out clean. Let cool.
  5. Whisk together powdered sugar, softened cream cheese, milk, vanilla, and cinnamon until smooth and pourable. Drizzle glaze over cooled bread, slice, and enjoy!
