Pumpkin Banana Chip Bread

Ingredients:
1 cup pumpkin purée
2 ripe bananas, mashed
¼ cup coconut sugar
½ cup neutral oil
2 large eggs
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
1 cup Sun Tropics Original Saba Banana Chips, broken into pieces
Glaze:
2 Tbsp cream cheese, softened
1 cup powdered sugar
2 Tbsp milk
½ tsp vanilla extract
Pinch of cinnamon
Directions:
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk pumpkin, mashed bananas, sugar, oil, eggs, and vanilla until smooth.
- In another bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt. Fold dry ingredients into the wet mixture until just combined. Stir in chopped Saba Banana Chips for a crunchy bite. Pour batter into prepared pan.
- Bake for 55-65 mins., until a toothpick inserted in the center comes out clean. Let cool.
- Whisk together powdered sugar, softened cream cheese, milk, vanilla, and cinnamon until smooth and pourable. Drizzle glaze over cooled bread, slice, and enjoy!
