Banana Chips Coffee Cake

Makes 12 Servings

Ingredients:

For streusel:
5 Tbsp unsalted butter
¼ cup cane sugar
¼ cup light brown sugar, packed
½ cup walnut pieces, coarsely chopped
½ cup all-purpose flour
¼ tsp freshly grated or ground nutmeg
1 tsp ground cinnamon
¼ tsp salt
1/3 cup Sun Tropics Sea Salt Saba Banana Chips, crushed

For the cake:
2 very ripe medium bananas (about ¾ cup mashed)
1 large egg
½ cup light brown sugar, packed
½ cup cane sugar
2 tsp vanilla extract
¼ tsp salt
½ cup whole or 2% milk
½ vegetable oil
1 ½ cups all-purpose flour
2 tsp baking powder

Directions:

  1. Prepare the streusel:  In a microwave-safe bowl, add the butter. Microwave in 15 second bursts until melted, about 45 secs. total. (Alternatively, melt in a small saucepan over medium-low heat). Add the remaining ingredients, including the Saba Banana Chips, into the melted butter. Stir with a fork until the mixture forms coarse crumbs. Refrigerate the streusel for at least 10 mins. while preparing the cake batter.
  2. Preheat the over to 350 °F. Arrange the rack in the middle of the oven. Line an 8″ square baking pan with two overlapping sheets of parchment paper, ensuring the edges hang over the sides to form a sling.
  3. In a large mixing bowl, mash the bananas until smooth using a fork or potato masher. Add the egg, light brown sugar, cane sugar, vanilla extract, salt, milk, and vegetable oil. Whisk until well combined.
  4. Then add the all-purpose flour and baking powder to the wet mixture and stir gently with a rubber spatula until no dry spots remain. Do not overmix.
  5. Pour the batter into the prepared baking pan, spreading it into an even layer. Crumble the chilled streusel evenly over the top.
  6. Bake for 50-55 mins., or until the top is golden brown and toothpick inserted into the center comes out clean. Transfer the pan to a wire rack and let the cake cool for 15 mins. Use the parchment sling to lift the cake from the pan and transfer it on the wire rack. Cool completely for at least 1 hour.
  7. Transfer the cooled cake to a cutting board. Slice into 12 squares and serve.
