Layered Mango Dream

Makes 12 Servings
Ingredients:
1 cup Sun Tropics Original Tapioca Pudding
¾ cup Sun Tropics Mango 100% Juice
1 tsp gelatin powder, unflavored
3 Tbsp chia seeds
¾ cup full-fat coconut milk
1 medium ripe mango (yields about ½ cup slices)
4 pcs Sun Tropics Original CocoRolls
Directions:
- Pour 2 Tbsp of the Mango 100% Juice into a small bowl. Sprinkle gelatin evenly over the surface, stir and let bloom until thick and spongy.
- Warm the remaining Mango 100% Juice in a small saucepan over low heat (do not boil). Whisk in the bloomed gelatin until fully dissolved and smooth. Remove from heat and let cool for 5-10 mins., until slightly thickened but still pourable.
- In a bowl, stir chia seeds and coconut milk until combined. Let sit for 10 mins., stirring once halfway through, until thickened into chia pudding.
- Spoon a layer of Tapioca Pudding into clear glasses, add a layer of mango gelatin, then a layer of chia pudding. Repeat layers once more. Refrigerate for 30-45 mins, to allow the mango layer to softly set.
- Top with fresh mango slices and decorate each parfait with 2 pcs CocoRolls. Serve chilled.
