Thai Red Curry with Vegetables and Jasmine Rice

Starting with a curry paste made from scratch. We roast aromatic coriander and cumin seeds and finely crush fresh galangal, lemongrass, kaffir lime peel, shallots and Thai basil, with fresh and dried chilis. All are simmered in fresh-pressed coconut milk with kaffir lime leaves, bamboo shoots, protein-rich edamame and other tender vegetables.

    Fantastic 90 second dinner!

    This red curry dish is really delicious. A little spicy but perfect for this Norwegian pallet! I have become hooked on this meal, can’t get enough and it is ready to eat in 90 seconds…

    I’ve been testing out instant ramen and other quick foods I can microwave in my office and I was so excited to get this Thai Curry – it’s the best instant food I ever had. Better than a lot of restaurant food! so fresh tasting. rich and a little s[ice but not too much. Glad there is no black plastic also – since that apparently is not as safe as other colors. But I put it in a ceramic bowl and microwaved it anyway – and in my tiny microwave I have to do 3 min instead of 90sec because it’s a weak microwave. anyway, I need to get more of these….
