Serrano Ahi Poke with Banana Chips

Makes 4 Servings
Ingredients:
¼ cup sriracha mayo
1 Tbsp soy sauce
1 tsp sesame oil
1 Tbsp fresh lime juice
1 lb sushi-grade yellowfin ahi tuna, cut into ½ cubes
¼ cup finely diced red onion
2 green onions, thinly sliced
1 serrano chili, thinly sliced
Sesame seeds, for garnish (optional)
Butter lettuce leaves, for serving
1 bag Sun Tropics Sea Salt Banana Chips
Directions:
- In a large bowl, whisk together the sriracha mayo, soy sauce, sesame oil, and lime juice until smooth.
- Add the cubed ahi tuna, red onion, and green onions to the mayo mixture. Gently fold until the tuna is evenly coated.
- Transfer the poke mixture to a small serving bowl and top with the sliced serrano chili and a sprinkle of sesame seeds, if using.
- Arrange the butter lettuce leaves on a serving platter and top each with Sea Salt Banana Chips. Spoon the poke mixture over the banana chips and serve immediately for a crisp, refreshing bite.
