Serrano Ahi Poke with Banana Chips

Makes  4 Servings

Ingredients:

¼ cup sriracha mayo
1 Tbsp soy sauce
1 tsp sesame oil
1 Tbsp fresh lime juice
1 lb sushi-grade yellowfin ahi tuna, cut into ½ cubes
¼ cup finely diced red onion
2 green onions, thinly sliced
1 serrano chili, thinly sliced
Sesame seeds, for garnish (optional)
Butter lettuce leaves, for serving
1 bag Sun Tropics Sea Salt Banana Chips

Directions:

  1. In a large bowl, whisk together the sriracha mayo, soy sauce, sesame oil, and lime juice until smooth.
  2. Add the cubed ahi tuna, red onion, and green onions to the mayo mixture. Gently fold until the tuna is evenly coated.
  3. Transfer the poke mixture to a small serving bowl and top with the sliced serrano chili and a sprinkle of sesame seeds, if using.
  4. Arrange the butter lettuce leaves on a serving platter and top each with Sea Salt Banana Chips. Spoon the poke mixture over the banana chips and serve immediately for a crisp, refreshing bite.
