Chickpea Lettuce Boats

Makes 2-3 Servings

Ingredients:

1 can chickpeas (15 oz), drained
1 avocado, diced
½ cup fresh mango, diced
½ cup cucumber, diced
1 lime, juiced
Salt and pepper to taste
½ cup Sun Tropics Sea Salt Mochi Crunchplus more for topping
6 romaine leaves, for serving

Directions:

  1. In a medium bowl, add chickpeas, avocado, mango, cucumber, lime juice, salt, and pepper.
  2. Stir in the Sea Salt Mochi Crunch.
  3. Spoon the mixture into romaine leaves and top with the remaining Mochi Crunch and enjoy!
  4. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.\
