Chickpea Lettuce Boats

Ingredients:
1 can chickpeas (15 oz), drained
1 avocado, diced
½ cup fresh mango, diced
½ cup cucumber, diced
1 lime, juiced
Salt and pepper to taste
½ cup Sun Tropics Sea Salt Mochi Crunch, plus more for topping
6 romaine leaves, for serving
Directions:
- In a medium bowl, add chickpeas, avocado, mango, cucumber, lime juice, salt, and pepper.
- Stir in the Sea Salt Mochi Crunch.
- Spoon the mixture into romaine leaves and top with the remaining Mochi Crunch and enjoy!
