Garden Heart Salad

Makes 2 Servings

Ingredients:

3 cups spinach
1 cup baby arugula
½ cup watermelon radish, thinly sliced
2-3 medium cucumbers, peeled and thinly sliced (for ½ cup cucumber hearts)
½ pint strawberries, thinly sliced (for 1 cup strawberry hearts)
1 medium ripe mango, thinly sliced (½” thick, for 1 cup mango hearts)
Sun Tropics Sea Salt Mochi Crunch, for topping

Dressing
3 Tbsp Sun Tropics Pure Calamansi 100% Juice
2 tsp rice vinegar
1 tsp honey
4 Tbsp olive oil
Salt, to taste

Directions:

  1. Add the arugula and spinach to a large bowl or serving platter.
  2. Use a small heart-shaped cookie cutter to cut hearts from the fruit and vegetable slices. Set the hearts aside and snack on the scraps.
  3. Mix the dressing: In a small bowl or jar, whisk together the Pure Calamansi 100% Juice, rice vinegar, honey, olive oil, and a pinch of salt.
  4. Build the salad: Scatter the heart-shaped fruit and veggies over the greens.
  5. Drizzle lightly with the dressing. Top with the Mochi Crunch and enjoy immediately.
