Guava Gelato

Total Time:        2 hrs 5 mins (including freeze time)

Makes 2 Servings

Ingredients:

5-6 medium bananas, sliced and frozen (about 3 cups)
¼ cup frozen or fresh red dragon fruit, cubed
1 cup Sun Tropics Guava 100% Juice
½ cup coconut milk
1-2 Tbsp fresh lime juice (to taste)
1 kiwi, diced, for garnish

Directions:

  1. Add the frozen bananas and red dragon fruit to a food processor and pulse several times to break them into smaller pieces.
  2. Add Guava Juice, coconut milk, and lime juice. Process until thick, smooth, and creamy, stopping to scrape down the sides as needed. If the mixture is too thick to blend, add 1-2 Tbsp of additional Guava Juice.
  3. Transfer the mixture to a freezer-safe container and freeze for at least 1-2 hours, until scoopable.
  4. If freezing longer or overnight, allow the sorbet to sit at room temperature for 10-15 mins before scooping. For best texture, briefly re-blend if needed.
  5. Scoop and top with fresh kiwi. Serve immediately and enjoy.
