Guava Swirl Yogurt Bites

Prep Time:            10 mins
Total Time:            4 hours or overnight

Makes 12-16 bites (depending on mold size)

Ingredients:

1 cup Greek yogurt
2 Tbsp agave
¼ tsp gelatin powder
1 tsp cold water
3 Tbsp Sun Tropics Guava 100% Juice
⅓ cup mango, diced

Directions:

  1. Make the yogurt base: In a bowl, stir together the Greek yogurt and agave until smooth. Set aside.
  2. Sprinkle the gelatin over 1 tsp cold water in a small bowl. Let sit 2-3 mins until the gelatin absorbs the water and thickens.
  3. Microwave the Guava 100% Juice for 10-15 secs until warm. Stir the bloomed gelatin into the warm guava juice until completely dissolved. Let sit 2-3 mins until the mixture becomes slightly syrupy.
  4. Spoon the yogurt mixture into silicone molds, filling each about ¾ full. Add small drops of the guava mixture on top of each mold.
  5. Use a toothpick or skewer to gently drag the guava mixture through the yogurt, moving from top to bottom so the swirl runs throughout the bite. Avoid over-mixing so the colors stay marbled.
  6. Place the molds in the freezer for at least 4 hours or overnight, until completely firm. Pop the frozen bites out of the molds and serve with diced mango. Serve immediately.
