Springtime Mashed Edamame

Makes 4 Servings

Ingredients:

2 Tbsp sesame seeds
1 ½ cups shelled edamame, steamed
1 cup vegetable stock
1 Tbsp low-sodium tamari soy sauce
1 tsp fresh lime juice
¼ tsp sea salt
Pinch of black pepper
Sun Tropics Tamari Teriyaki Mochi Crunch, for dipping or as topping

Directions:

  1. Preheat oven to 350 °F and spread sesame seeds on a baking sheet; toast for 3-5 mins. until golden.
  2. Add edamame, vegetable stock, tamari soy sauce, lime juice, sea salt, black pepper, and sesame seeds to a food processor.
  3. Blend until smooth and creamy, scraping down sides as needed.
  4. Transfer to a serving bowl for dipping or divide evenly onto 4 plates as a side dish.
  5. Top with Mochi Crunch and serve immediately.
