Grilled Guava-Glazed Chicken with Salad Greens
Tender chicken glazed with tropical marinade served with a hearty salad of a variety of flavors and textures.
4 cloves garlic, crushed
1 cup Sun Tropics® Guava Nectar
¼ cup oyster sauce
2 Tablespoons honey
6 pieces of chicken breasts
Salt and pepper
8 cups mixed salad greens
1 piece medium carrot, cut into strips
1 piece medium unpeeled cucumber, cut into strips
2 medium red onions, sliced thinly
1 cup crumbled nachos
¼ cup Sun Tropics® Guava Nectar
1 Tablespoon apple cider vinegar
2 Tablespoons olive oil
¼ teaspoon salt
dash of white pepper
2 teaspoons honey
1 Tablespoon mayonnaise
- Combine all ingredients in the marinade. Place the chicken breasts in the marinade for at least 30 minutes.
- Season the chicken breasts with salt and pepper just before grilling. Grill the chicken breasts, skin side down, until the marinade caramelizes and the chicken is cooked. Baste the chicken with the marinade while grilling.
- In a large bowl, combine the salad greens, carrots, cucumber, and red onions. Toss the salad in the dressing.
- Top with sliced grilled chicken and crumbled nachos before serving.
