Grilled Prawns in Skewers

Sun Tropics® Mango Nectar, ginger, garlic, and mint combined with a touch of fish sauce create a delicious marinade! For perfectly tender prawns every time, always grill one and a half to two minutes on each side, until just opaque. If they stay on the grill much after they turn opaque, they begin to get dry and tough. But follow this recipe, & you’ll have perfect prawns, every time!



1½ cups Sun Tropics® Mango Nectar
1 Tablespoon fish sauce (found in Asian section)
1 teaspoon kosher salt
½ Tablespoon fresh garlic, minced
4 pieces thinly sliced ginger
2 sprigs mint, torn
¼ teaspoon black pepper, ground
16-18 pieces prawns, shelled and deveined


  1. In a medium bowl, combine all ingredients for the marinade.
  2. Marinate prawns for at least 15 minutes to an hour.
  3. Skewer prawns with metal or bamboo sticks.
  4. Grill for 1 1/2 to 2 minutes on each side until opaque in color.
  5. Serve over lettuce and garnish with fresh mangoes and jalapeño (optional)
