Grilled Spareribs in Mango Marinade

Mouthwatering and tender caramelized pork ribs grilled to perfection

Ingredients:

2 cups Sun Tropics® Mango Nectar
6 cloves garlic, minced
1/3 cup honey
3 Tablespoons Worcestershire sauce
4 Tablespoons soy sauce
3 Tablespoons rice wine / white wine
3 teaspoons finely chopped lemon peel
salt and pepper
2 pounds pork spareribs

Directions:

  1. Combine the Mango Nectar, garlic, honey, Worcestershire sauce, soy sauce, wine, and lemon peel in a saucepan.  Cook over medium low heat and let it boil.  Simmer until mixture thickens.  Season with salt and pepper.  Set aside to cool.
  2. Marinate meat in the cooked mixture for 30 minutes.  Leave ½ cup of the mixture for basting.
  3. Season the meat with salt and pepper.  Grill for 10-15 minutes each side, or until ribs are cooked and the sauce has caramelized.  While grilling, baste with remaining marinade.
  4. Serve hot with a fresh salad and corn on the cob.

Chef Note:

This recipe can also be used with sliced pork, chicken, or fish fillets.
