Tropical Calamansi Tacos

Add a tangy sweetness to your tacos by simmering real Calamansi into the meat!

Ingredients:

1 pound ground beef
1 Tablespoon garlic, minced
1 teaspoon cumin powder
1/4 teaspoon salt (optional)
3/4 cup Sun Tropics® Pure Calamansi
corn tortillas
shredded lettuce
diced tomatoes
shredded cheddar cheese

Directions:

  1. In a medium frying pan, cook over medium heat ground beef, garlic, cumin, and salt until just no longer pink, stirring occasionally (*Note: do not add the Pure Calamansi yet!).
  2. Drain the excess juices from the pan. Return meat into the pan and add the Pure Calamansi. Continue to cook over medium heat, stirring occasionally, until the juice has absorved into the meat and no longer puddles in the pan. Taste test a cooled piece of meat. If you would like an even tangier sweetness, add another 1/4 – 1/2 cup Pure Calamansi and simmer again until the juice has absorved into the meat.
  3. Heat tortillas:

In a microwave, wrap a moist towel around tortillas and place in microwave-safe dish and cover, heating for 50% heat for 4 minutes.

Or in a steamer on the stove: pour 1/2 inch water into the bottom of the steamer. Place the basket in the steamer and top with a heavy, clean kitchen towel. Place tortilla stack on kitchen towel and fold edges of towel to cover. Cover pan with lid, bring to a boil, and allow to boil for 1 minute only. Then turn heat off and let sit for fifteen minutes, covered.

     4. Assemble tacos by topping tortillas with meat, shredded lettuce, diced tomatoes, and cheese.
