At the Hamilton airport just around the corner from Toronto, Canada, I discovered a gluten free, vegan treasure – Coconut Milk Rice Pudding. In my youth I loved rice pudding, store bought or home made, but alas, this adult body has grown weak. I am unable to handle gluten or lactose and absolutely not before an international flight. Enter Sun Tropics with this angelic solution. On the first bite I heard the Kingston choir erupt with heavenly sound and the voices of my Jamaican ancestors filled body. But it wasn’t really their voices, it was this coconut milk rice pudding lifting my soul, preparing me for take off. I have no idea where I can purchase this snack outside of this little airport, but I will be searching for it. Knowing, waiting, to experience it once more.
